When I started working on this book I asked my friends what they liked eating for lunch as kids. Most of them said PB&J. Period. The end. But my friend Alex’s mom must have had a much deeper repertoire with which to tempt her daughter. She told me about one of her favorite treats as a child—one I’ve dubbed Fruity Delight. It consists of naturally sweet fruit topped with tart sour cream or yogurt and just a sprinkling of crunchy brown sugar. How could four simple ingredients be this unbelievably luscious? Just try it and you’ll see.
1 nectarine, pitted and diced
2 strawberries, hulled and diced
2 tablespoons sour cream or plain Greek yogurt
2 teaspoons brown sugar
1. Divide the nectarine and strawberries between two small serving bowls.
2. Top each with a dollop of sour cream or Greek yogurt and sprinkle with brown sugar.
NOTE: This recipe can be made with any type of fruit you like, such as grapes, melon, berries, mango, and more—choose fruit that’s in season for the best-tasting results.
