cream cheese icing

Makes 1 cup

4 ounces cream cheese, softened

4 tablespoons (½ stick) unsalted butter, softened

1 cup powdered sugar

1 teaspoon pure vanilla extract

1. Place the cream cheese and butter in a bowl and use a hand mixer to beat for 30 seconds on medium-low speed.

2. Add the powdered sugar and vanilla and beat for 1 minute, or until the frosting is smooth and creamy.

3. Frost the muffins.
