Like most of us, growing up I was used to homemade Rice Krispies Treats made with plenty of sugary, gooey marshmallows and cut into uneven blocks. Then there were the pre-made ones you could buy in the store, loaded with corn syrup. Not the most nutrtious of treats, but oh, those memories!

This is my healthful and (in my opinion) considerably more fun take on the classic. I use brown crisped rice cereal instead of white and toss out the marshmallows in favor of protein-packed nut butters. Then I roll them into bite-sized balls to give them more eye appeal.

Crispy, crunchy, sweet, and always a simple success!

Makes 70 balls

⅔ cup brown rice syrup

⅔ cup almond, peanut, or sunflower seed butter

4 cups organic crispy brown rice cereal

1. In a small saucepan over low heat, warm the brown rice syrup and nut butter and stir for about 2 minutes, until melted and combined.

2. Place the crispy rice cereal in a large bowl. Pour the syrup over the cereal and mix thoroughly.

3. When the mixture cools a bit, use a small ice cream scoop or a 1 tablespoon measure to form the mixture into small balls. (Moisten your hands with a little water to make rolling the balls easier.)

TIP: Place balls in a sealed container at room temperature for up to 5 days.
