Keto Pancakes

If you are just starting out on the keto diet, know that you can still make foods you love—like these pancakes—and not feel like you are missing out on anything. Amp up the good fats by serving with a side of bacon.

Makes 5 pancakes (5 servings)

Preheat a griddle.

Combine the cream cheese, eggs, coconut flour, vanilla, cinnamon, and salt in a blender and blend on high until smooth, about 1 minute. Alternatively, you can beat the ingredients in a bowl with an electric mixer until smooth, about 3 minutes.

Melt the butter on the griddle and spread it around with a spatula. Pour spoonfuls of batter onto the griddle and cook until bubbles form and start to pop. Flip and continue to cook until browned.

If you like, serve with maple syrup or blueberry sauce.
