Blueberry Sauce

The flavor of Lakanto monkfruit sweetener is my personal favorite, but you can use stevia or erythritol. This sauce is the best on the Keto Pancakes.

Makes 1¼ cups (20 servings)

In a saucepan over low heat, combine ¼ cup water with the blueberries, sweetener, and lemon juice. Cook, stirring occasionally, until the fruit has reduced into a thick sauce, about 20 minutes. For a thicker sauce, smash the blueberries and stir frequently while cooking. If you like your sauce chunky, leave the blueberries whole while cooking, which will result in a compote. If you’d like to make the sauce a bit thicker, add the xanthan gum and stir thoroughly.

Serve warm or let cool completely before storing. Store in a covered container in the refrigerator for up to 7 days. Reheat the sauce over low heat when you are ready to use it.

Variation
