These are very filling so don’t be surprised if you can only eat half of one. Save the rest for tomorrow or share with a friend. Instead of maple syrup, you can top with Blueberry Sauce, or serve with sliced strawberries.
Makes 4 waffles (4 servings)
Preheat a waffle iron according to the manufacturer’s instructions. Spray the waffle iron with cooking spray.
Combine the cream cheese, eggs, melted butter, coconut flour, stevia, baking powder, vanilla, and cinnamon, if using, in a blender and blend on high until smooth, about 1 minute. Alternatively, you can beat the ingredients in a bowl with an electric mixer until smooth, about 3 minutes.
Pour about ¼ cup of the batter onto the hot waffle iron. The batter will spread only a little bit, unlike conventional waffle batter, so spread it out a little with a spoon before closing the lid. Cook until browned. Repeat to make 4 waffles.
Top with butter and maple syrup and enjoy.
