SAUTÉED CABBAGE

SERVES 4 to 6

Cabbage typically shows up in coleslaw form, but it’s absolutely delicious when cut into ribbons and sautéed in butter until sweet and silky. Some garlic and cumin seeds punch up its mellow flavor.

2 tablespoons unsalted butter

1 tablespoon minced garlic

1 small head red or green cabbage (about 1½ pounds), cored and thinly sliced

1 teaspoon kosher salt, plus more to taste

½ teaspoon whole cumin seeds

¼ teaspoon freshly ground black pepper, plus more to taste

Grated zest and juice of ½ lemon

In a large skillet over medium heat, melt the butter. Add the garlic and sauté for 1 minute. Add the cabbage and salt and sauté for 3 minutes. Add the cumin and pepper and cook, stirring, 1 minute more, until the cabbage is wilted. Remove from the heat and stir in the lemon zest and juice. Season to taste with additional salt and pepper and serve.
