COCONUT OATMEAL WITH CACAO NIBS AND DATES

Cacao nibs are unprocessed (and unsweetened) bits of the seedpod that produces chocolate and they can make your morning porridge a lot more interesting without making it sweet (that’s what the date is for).


In a small saucepan, combine ¾ cup cooked steel-cut oats with 2 tablespoons coconut milk and an optional pinch of fine sea salt. Stir over medium-low heat until warmed through. Stir most of the cacao nibs into the oatmeal, spoon oats into a bowl, and garnish with the remaining nibs, 1 tablespoon toasted coconut flakes, and 1 Medjool date, slivered.
