CRANBERRY SAUCE

This is a standard cranberry sauce, freshened up with a touch of orange. Feel free to use lime, lemon, or even a little chili (chopped fresh ones, or your favorite hot sauce to taste).

SERVES 8 TO 10

INGREDIENTS

1 cup sugar

4 cups fresh or frozen cranberries

Juice and zest of 1 orange

DIRECTIONS

• Combine all the ingredients in a medium pot over medium heat and bring to a boil.

• Reduce heat to medium-low and cook, uncovered, stirring occasionally, for 45 to 50 minutes, until the cranberries completely break down and a jam forms.
