GRAVY

Don’t bother with gravy helper when it’s beyond simple to make it fresh.

SERVES 8 TO 10

INGREDIENTS

4 tablespoons unsalted butter (¼ cup)

¼ cup all-purpose flour

4 cups turkey drippings (the stuff in the bottom of the pan after you cook the turkey)

DIRECTIONS

• Melt the butter in a medium saucepan over medium-high heat. Gradually whisk in the flour and cook, whisking constantly, until the mixture begins to turn light brown.

• Whisk in the turkey drippings, 1 cup at a time.

• Bring to a boil, then reduce to a simmer and cook, whisking frequently, until the gravy is thick and creamy, about 10 minutes.

• Remove from heat and taste for seasoning, adding salt and pepper if the gravy needs it. (It likely won’t, as the drippings are already pretty salty, but it’s good to check.)
