Lox and Onion Eggs

Getting bored with regular old scrambled eggs? This should fix that.

Prep Time: 5 minutes Cook Time: 10–13 minutes Makes: 4 servings

1 tablespoon (15 ml) olive oil

1 medium onion, cut into small dices

8 large eggs

½ teaspoon salt

Pinch black pepper

¼ pound (113 g) Lox

Heat a large skillet over medium high heat and add the oil. Once hot, add the onions and sauté for 8–10 minutes, or until golden brown and beginning to soften.

Meanwhile, whisk the eggs with the salt and pepper. Once the onions are golden brown, add the eggs to the pan. Once they start to set on the bottom, add the lox and scramble into the eggs. Cook until just set, about 2–3 minutes, or until cooked to your liking.

Bubbe’s tip: You want these to be more fancy? You can add whatever you like! Spinach, tomatoes or fresh herbs. The sky is the limit, bubula!
