Simone’s ideal lox bagel. She’s quite the opposite of a picky eater, but raw onions are one thing she will flip a table over.
Prep Time: 5 minutes Cook Time: None Makes: 1 serving
2 tablespoons (30 g) Cashew Cream Cheese
1 Bagel, Plain or Everything (here or here), sliced and toasted
3–4 chives, chopped
2 ounces (55 g) or about 3 slices Lox
1 large slice of tomato
3–4 slices cucumber
Spread a tablespoon (15 ml) of cream cheese on each of the bagel halves. Press the chives into the bottom half and add the lox, tomato and cucumber. Top with the remaining half of the bagel and serve.
Bubbe’s tip: Nobody likes a soggy bagel. Use firmer tomatoes to make your Simone as awesome as the real deal.
