Pickled, fermented, braised or shredded, purple cabbage is easy on the eyes and delicious on the taste buds. This side dish makes a perfect companion to Bubbe’s Brisket or Balsamic Braised Short Ribs.
Prep Time: 10 minutes Cook Time: 30 minutes Makes: 6 servings
3 tablespoons (45 ml) avocado oil, olive oil or preferred cooking fat
1 head purple cabbage, chopped
½ onion, diced
4 garlic cloves, minced
1 cup (240 ml) Chicken Broth (here or here)
1 tablespoon (15 ml) apple cider vinegar
1 teaspoon sea salt
½ teaspoon ground black pepper
Heat a large skillet over medium-high heat. Add the oil. Once shimmering, add the cabbage and onion.
After about 5 minutes, add in all the garlic, chicken broth, vinegar, salt and pepper. Cover and cook for 15 minutes, checking periodically. For the last bit of cook time, about 5–10 minutes, remove the lid and allow any excess liquid to cook off. Serve warm.
Bubbe’s tip: What?! Purple cabbage gives you anxiety? Any color cabbage will work. Relax bubula, don’t stress that kop of yours.
