Israeli Salad

This delicious classic is perfect for any occasion. It is a refreshing and nutrient-dense, plant-based side that can easily be made a meal if you introduce a bit of protein.

Prep Time: 15 minutes Cook Time: None Makes: 6 servings

5 Roma tomatoes, seeded and diced small

3 Persian cucumbers, diced small

½ small onion, diced small

1 small handful minced fresh parsley

2 garlic cloves, minced

1 tablespoon (15 ml) olive oil

Juice from 1 lemon

Sea salt and ground black pepper to taste

¼ cup (30 g) toasted pine nuts, optional

Combine all ingredients and toss together. Keep refrigerated until ready to serve. If adding in the pine nuts, you’ll want to add them in just before serving so they remain fresh and crunchy.
