Ginger–Lime Beet and Apple Salad

This salad may only have a handful of ingredients, but it’s packed full of flavor. The ginger and lime are the perfectly bright complement to the earthy beets. It’s wonderful with a Simple Roast Chicken.

6 small beets, about ½ pound (230 g) or 1 bunch, peeled

1 medium green apple

2 teaspoons (4 g) grated fresh ginger

3 tablespoons (45 ml) lime juice

3 tablespoons (45 ml) extra virgin olive oil

¼ teaspoon salt

Grate the beets and apple with the coarse side of a box grater or with the grater attachment of your food processor.

In a large bowl, combine the beet and apple with remaining ingredients and stir to combine.

Bubbe’s tip: This salad packs the most punch when it’s first made. If you want to make it ahead, keep the dressing separate and mix together shortly before serving.
