Apple Kugel

For Rosh Hashanah, we often make delicious foods with apples and honey for a “sweet new year.” This Apple Kugel recipe takes away the refined white flour for a delicious, cake-like treat that won’t weigh so heavily once eaten!

5 eggs

3 tablespoons (45 ml) avocado oil, or preferred cooking fat

½ cup (120 ml) honey

¼ cup (28 g) coconut flour

½ cup (64 g) arrowroot powder

1 teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Pinch sea salt

2 apples, sliced thin

Preheat the oven to 350°F (177°C) and grease an 8 × 8 inch (20 × 20 cm) casserole dish. Next, beat eggs, avocado oil and honey in a mixing bowl until well combined.

In another mixing bowl, combine coconut flour, arrowroot powder, baking soda, cinnamon, nutmeg and sea salt.

Add the wet ingredients into the dry ingredients and whisk until well incorporated. Pour the kugel batter into the prepared baking dish.

Next, arrange your apple slices into the batter. You may arrange them any way you please, as long as the bottom later becomes submerged. The remaining layers may drift up toward the surface more, which makes for a nice presentation after baking.

Put your casserole dish into the oven and bake for 30–40 minutes or until just set in the center.
