These are like Jewish carnival food if there ever was such a thing! Fried apples in a delicious crispy batter—perfect for Hanukkah or for days ending in “y.”

Avocado oil, coconut oil or palm shortening for frying
2 Granny Smith apples
2 eggs
2 tablespoons (30 ml) maple syrup
½ teaspoon ground cinnamon
½ teaspoon 100% vanilla extract
¾ cup (95 g) tapioca starch
½ cup (48 g) almond flour
½ cup (120 ml) water
FOR SERVING
Additional tapioca starch
Coconut palm sugar, to taste
Additional ground cinnamon
Heat your cooking fat in a small saucepan over medium-high heat. Make sure the oil is about an inch (2.5-cm) deep in the saucepan. By using a smaller pan, you can thereby use less oil.
Core and slice your apples into rings. This can be done one of two ways: either use an apple corer first and then slice rings afterwards, or you can use a mandolin and slice the apples into rings and then remove the seeds afterwards.
To make the batter, whisk the eggs, maple syrup, cinnamon, vanilla extract, tapioca starch, almond flour and water. Dip each apple ring into the batter and then carefully and quickly transfer over to the hot oil. Fry for about 2–3 minutes on each side and then place on a towel-lined plate.
Repeat until all the apple rings are fried. Before serving, sprinkle tapioca starch (cosmetic), a bit of coconut sugar or some ground cinnamon.
Bubbe’s tip: How hot is your oil? You’ll want it to be “shimmering” before you try to fry or you will end up with soggy fritters. Not appealing!
