Gluten-Free Apple Strudel

Amie treats us not only to her blogs, but to a recipe that she describes as, “One of the best gluten-free baked goods to come out of my tiny Manhattan apartment all season. You want this. Trust me; there’s no such thing as just one bite.”

1 tablespoon sugar

¼ cup fresh rosemary leaves, minced

8 large organic McIntosh apples, peeled and sliced

1½ cups gluten-free all-purpose flour

¼ cup sugar

1 teaspoon baking powder

⅓ teaspoon sea salt

2 teaspoons ground cinnamon plus more for topping

¼ teaspoon allspice

¼ teaspoon fresh, organic orange zest (see Chef’s Tips on citrus zest, this page)

2 tablespoons fresh organic orange juice

¼ teaspoon gluten-free almond extract

2 large eggs

Preheat an oven to 350°F. Spray a baking dish with baking spray. Sprinkle in the sugar and rosemary. Add sliced apples; spread evenly. In a large bowl, combine the flour, sugar, baking powder, sea salt, cinnamon, allspice, and orange zest. Add orange juice, almond extract, and eggs; mix well to combine and form a mealy texture. Transfer the mixture on top of the apples in the baking dish. Sprinkle with additional ground cinnamon. Bake for 40 minutes or until golden brown.
