Curried Coconut Soup

Curried coconut soup can be served chilled or hot. The base of the soup consists of coconut milk, milk, water and sometimes egg yolks or ghee. In most cases, the soup is seasoned with a curry powder consisting of cardamom, chili powder, cloves and cumin. It may also contain spices such as nutmeg or fennel. Although ingredients vary, almonds, coconut flakes, onions and pistachios are typically included. The soup is usually garnished with toasted coconut flakes.

Mulligatawny (Chicken and Vegetable Soup)

There are hundreds of variations of Mulligatawny, but most follow a basic recipe. Fresh chicken stock is the base of the soup, with standard ingredients including carrots, celery, chicken, chili peppers, lentils, lemon juice, onions, potatoes, tomatoes and rice. Some chefs include coconut milk and milk. The ingredients of the soup are sautéed in ghee or oil with various types of Indian spices and then added to the fresh chicken stock. It can be garnished with cream or coconut cream, chopped coriander leaves or parsley and toasted almonds or pistachios.

Sambar (Lentil and Vegetable Stew)

The base of Sambar is a fresh vegetarian stock made with water, tamarind juice or paste and sambar powder (ground black pepper, chili powder, coconut, coriander, cumin, fenugreek seed, lentils, mustard seed and tumeric). Many types of chopped vegetables, which usually include onions, potatoes, shallots, tomatoes and turnips, are sautéed in ghee or oil. The vegetables are then added to the fresh stock with lentils or rice. It is served as a stew or a side dish with dosas (South Indian crepes or pancakes).
