Masala Dosa (Spicy Vegetable Filled Crepe)

Masala Dosas are fermented dough made with a combination of chickpea (besan), lentil (dal) or rice flour and salt. A vegetable filling is prepared by sautéing sliced chili peppers, onions, peas and sometimes garlic in ghee or oil. Cooked cubed potatoes are then added with Indian spices, usually garam masala powder. Once fermented, the batter is placed on a griddle which has been lightly brushed with ghee or oil to make a thin crepe or pancake. The vegetable filling is then placed in the center and the crepe is wrapped around it like a small burrito. Dosas are usually served with common Indian condiments such as chutney, Indian pickles, raita and sambar.
