For Kheer, milk is brought to a boil with basmati rice, cardamom and sugar. Once the liquid is reduced in half, sliced nuts are added such as almonds, cashews or pistachios and the mixture is allowed to cool. Saffron and raisins may also be added from time to time. Rasmalai is Paneer and powdered sugar mixed together and shaped into flat balls similar to a biscuit. They are then cooked in light syrup made of sugar and water until they have a spongy consistency. In another pan, cardamom, cream, saffron, sugar and vanilla are brought a boil. The cheese balls are then added to the sweet cream and allowed to cool. Rasmalai is garnished with sliced tree nuts such as almonds, cashews or pistachios.
