Candied Blood Oranges

YIELD: ENOUGH TO DECORATE 1 (9-INCH) CHEESECAKE

            3 blood oranges

            1 cup water

            1 cup granulated sugar

1.    Using a paring knife, thinly slice the blood oranges into ⅛-inch discs.

2.    Make a simple syrup: Combine the water and sugar in a small saucepan over medium–high heat and bring to a boil.

3.    Add the orange slices to the boiling simple syrup, reduce the heat to medium, and allow to simmer for 10 minutes. Remove from the heat and allow the discs to cool in the saucepan.

4.    Drain the slices on paper towels. Use immediately or store in an airtight container.
