Huckleberry Compote

YIELD: 2½ CUPS

            2½ cups frozen huckleberries

            ¼ cup granulated sugar

            1 tablespoon fresh lemon juice

            Zest of 1 lemon

1.    Macerate the frozen huckleberries by placing them in a large mixing bowl and sprinkling the sugar, lemon juice, and zest over them.

2.    Toss gently with your hands and cover the bowl with plastic wrap. Place in the refrigerator for 2 hours before using.
