Honey Caramel

YIELD: 2 CUPS OR ENOUGH TO COVER 1 (9-INCH) CHEESECAKE

            ½ cup honey

            ⅓ cup granulated sugar

            ½ tablespoon molasses

            ¼ teaspoon salt

            ¼ cup heavy cream

1.    In a large, heavy saucepan over medium–high heat, combine all ingredients and bring to a boil. Allow to boil for 1 minute.

2.    Reduce the heat to medium and simmer for 5 minutes. Remove from the heat and transfer the caramel to a medium heatproof bowl. Set aside to cool to room temperature for 15 minutes; the caramel will thicken as it cools.
