If fresh herbs are not available, use one teaspoon
each of dried thyme, parsley, and dill.
½ cup fresh curd cheese (or farmer’s cheese, fat-free cream cheese, or yogurt cheese)
4 garlic cloves, minced
2 tablespoons extra virgin olive oil
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
Celtic salt
Combine the cheese, garlic, olive oil, thyme, dill, and parsley in a bowl and mix well. Salt to taste. Serve with nutty, whole grain breads.
