Broiled Salmon with Lime and Cilantro
⅓ cup cilantro leaves finely chopped
1 tablespoon extra virgin olive oil
1 garlic clove, minced
⅓ teaspoon Celtic salt
2 tablespoons fresh lime juice
4 (¾-inch-thick) salmon steaks
Combine the cilantro, olive oil, garlic, salt, and lime juice in a large glass dish and mix well. Remove 2 tablespoons of the marinade and set aside. Add the salmon steaks to the remaining marinade; let stand, covered, in the refrigerator for 10 minutes. Preheat the broiler. Drain the salmon and arrange on a broiling rack that has been sprayed with nonstick cooking spray. Brush with 1 tablespoon of the reserved marinade. Broil 6 inches from the heat source for 3 to 4 minutes. Turn the salmon over and brush with the remaining 1 tablespoon marinade. Broil for 3 more minutes or until fish flakes easily with a fork.
