Steamed Fish

The carrots, broccoli, and beans may be partially cooked ahead of time if desired.

2  pounds haddock or other fresh fish fillets

1  cup grated Parmesan cheese

½ cup broccoli florets

½ cup sliced green beans

½ cup thinly sliced carrots

8  slices fresh tomato

½ cup sliced fresh mushrooms

Celtic salt and pepper to taste

Divide fish into 4 portions and place each in the center of a square of aluminum foil. Spoon ¼ of the Parmesan cheese over each portion of fish. Arrange the broccoli, green beans, and carrots around edges of fish; place tomatoes and mushrooms on top. Season. Wrap in foil, sealing to enclose each packet, leaving an air space inside. Place on a baking sheet and bake at 425 degrees for 30 minutes or until vegetables are tender and fish flakes easily with a fork.
