Apricot Couscous

12   ounces couscous

2½  cups water

½    cup dried apricots, sliced

½    cup slivered almonds, lightly toasted

Chopped cilantro to taste

Celtic salt and freshly ground black pepper to taste

Combine the couscous and water in a bowl and let stand for about 30 minutes or until water is absorbed, stirring frequently to keep mixture from becoming sticky. Stir in the apricots, almonds, cilantro, salt, and pepper and place in the top of a double boiler over hot simmering water. Steam for about 20 to 30 minutes. Stir well and serve warm.
