If you prefer a garlic flavor that is not quite as strong, remove the garlic clove just before adding the dill.
1 pound green beans, trimmed
1½ tablespoons extra virgin olive oil
6 garlic cloves, peeled, halved
1 tablespoon fresh dill, chopped
¼ teaspoon hot red pepper flakes (optional)
String the green beans and rinse. Cut them into 1-inch lengths and steam for 10 to 15 minutes or until tender; drain. Heat the olive oil in a skillet over very low heat. Sauté the garlic in the hot oil for about 5 minutes or until tender; mash the garlic. Stir in the dill, green beans, and red pepper flakes; cook, covered, over low heat for about 5 minutes. Salt to taste and serve.
Yield: 4 servings

Cooking does destroy or reduce some of the allicin in garlic, and it weakens some of the garlic’s other theraputic benefits. Whether cooked, raw, or taken in extract form, however, garlic is one of the most potent natural healing foods known to man.
