2 pounds mushrooms
¼ cup fresh parsley, chopped
1 garlic clove, minced
Celtic salt to taste
1 teaspoon extra virgin olive oil
½ cup whole grain bread crumbs
Fresh Parmesan cheese, grated
Halve the mushrooms; if any are large, cut them in quarters. Spread evenly in a large oiled baking pan. Combine the parsley, garlic, salt, and olive oil in a small bowl; mix well. Dot the mushrooms with the parsley mixture. Bake, uncovered, at 350 degrees for about 30 minutes or until tender and liquid has been absorbed. Before the last five minutes of cooking time, sprinkle the bread crumbs over mushrooms. Sprinkle with Parmesan cheese before serving.
