Baked Cucumbers and Onions

2 cucumbers, sliced ΒΌ -inch thick

2 onions, thinly sliced, separated into rings

4 tablespoons whole wheat flour

Celtic salt and pepper to taste

2 tablespoons extra virgin olive oil

Preheat the oven to 350 degrees. Layer the cucumbers and onions in a deep baking dish, sprinkling each layer with flour, salt, and pepper. Drizzle the olive oil over the top. Bake for about 15 minutes or until onions are tender.

Yield: 4 to 6 servings
