Wherever we’ve listed sugar as an ingredient, we have also listed the approximate Stevia conversion amount. You will find that as you use Stevia more and more, you’ll discover the amount that tastes “just right” to you. As when using any sweetener, the amount preferred will vary depending on the person doing the tasting.

There are several different companies that produce Stevia, and the quality can vary. Some companies offer the pure Stevia powder with a filler, which dilutes the sweetness. Others provide the pure powder form, which is strongest. We have found that for cooking, the liquid concentrate form seems to work best. It’s easy to measure out in small quantities, and many people use this form to sweeten their tea or coffee.
