Serve this savory dip with fresh vegetables or over toasted bread.
½ cup red bell peppers, roasted
1 teaspoon basil
1 garlic clove, minced
1 cup fat-free cottage cheese
Combine the roasted peppers, basil, and garlic in a blender or food processor. Process until chopped. Add the cottage cheese; process until well blended. Chill, covered, for at least 1 hour.
Yield: about 1 cup
