Spinach Balls

2  (10-ounce) packages frozen spinach, cooked

2  cups herb-flavored stuffing mix

1  large onion, finely chopped

6  eggs, well beaten

¾ cup extra virgin olive oil

½ cup grated fresh Parmesan cheese Cayenne pepper to taste

1  garlic clove, minced

1  teaspoon Celtic salt

Drain the spinach, taking care to squeeze out all moisture. Combine the spinach, stuffing mix, onion, eggs, olive oil, Parmesan cheese, cayenne pepper, garlic, and salt in a large bowl; mix well. Shape the mixture into ¾-inch balls and arrange on a baking sheet that has been sprayed with olive oil cooking spray. Bake at 325 degrees for 15 to 20 minutes or until lightly browned.

Yield: 6 to 8 servings
