4 tomatoes, thinly sliced
1 cucumber, peeled, thinly sliced
¼ cup sliced black olives
¼ cup sweet onion, finely chopped
1 cup celery, sliced
¼ cup chopped mint
3 tablespoons chopped parsley
2 garlic cloves, minced
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
Celtic salt and freshly ground pepper to taste
Place tomatoes and cucumbers in a large bowl. Add the olives, onions, celery, mint, and parsley; toss to combine. Combine the garlic, olive oil, vinegar, salt, and pepper in a small bowl and whisk well. Add the vinegar mixture to the tomato mixture and toss lightly.
Yield: 6 servings
