Olive Oil Butter

This is a basic. It is delicious—but use it sparingly.

½ cup extra virgin olive oil

½ cup (1 stick) butter, melted or softened

Combine the extra virgin olive oil and butter in a mixing bowl, blender, or food processor. Blend until smooth. Chill, covered, until firm.

Yield: about 1 cup
