Fruit Soup

Make sure this delightful soup is very cold before serving.

1    cantaloupe, halved, seeded

1    quart strawberries

½   pound red seedless grapes

4    apples, peeled, cored, quartered

¾   cup fresh lemon juice

½   cup sugar (or ½ teaspoon of liquid Stevia)

6    cups water

1½ cups fresh orange juice

Scoop out the pulp of the cantaloupe with a spoon and slice it into bite-size pieces. Wash the strawberries and grapes and discard the stems. Blend the cantaloupe, strawberries, grapes, apples, ½ cup of the lemon juice, sugar, and water in a large saucepan over medium-high heat. Bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes. Place the cantaloupe mixture in a food processor and purée for 30 seconds. Mix in the remaining ¼ cup lemon juice and the orange juice. Cover and chill.
