Instant Oatmeal Three Ways

As kids, we loved those little packets of instant oatmeal we would eat before running off to school. Today, we’re more aware of both the cost and the environmental impact of prepackaged foods, which is how these three recipes were born. Michelle’s favorite was always the strawberries and cream flavor, and Toni’s was apple cinnamon. And of course, we can’t forget the classic maple and brown sugar!

Strawberries & Cream Instant Oatmeal

Yield: 1 serving

Prep time: 5 minutes | Cook time: 1 minute and 30 seconds | Total time: 6 minutes and 30 seconds

⅓ cup instant oats

2½ teaspoons powdered sugar

⅛ teaspoon vanilla extract

2 tablespoons diced and crushed freeze-dried strawberries

½ cup unsweetened, plain soy milk

1. In a single-serving microwave-safe bowl, combine all the ingredients.

2. Microwave for 1 minute and 30 seconds. Serve warm.

Friendly Suggestion: This recipe also tastes delicious with fresh diced strawberries in place of freeze-dried.

Apple Cinnamon Instant Oatmeal

⅓ cup instant oats

2½ teaspoons granulated sugar

⅛ teaspoon ground cinnamon

2 tablespoons finely diced freeze-dried apples

½ cup unsweetened, plain plant-based milk

1. In a single-serving microwave-safe bowl, combine all the ingredients. Mix well until no cinnamon clumps remain.

2. Microwave for 1 minute and 30 seconds. Serve warm.

Friendly Suggestion: This recipe is also delicious with finely diced Granny Smith apple (with peel removed) in place of the dried apple.

Maple & Brown Sugar Instant Oatmeal

Yield: 1 serving

Prep time: 5 minutes | Cook time: 1 minute and 30 seconds | Total time: 6 minutes and 30 seconds

⅓ cup instant oats

1½ teaspoons packed dark brown sugar

1 teaspoon pure maple syrup

½ cup unsweetened, plain plant-based milk

Pinch of salt

1. In a single-serving microwave-safe bowl, combine all the ingredients.

2. Microwave for 1 minute and 30 seconds. Serve warm.

Friendly Suggestion: If you want to save time, you can preassemble little glass jars with the dry ingredients so they’re all ready—just pour them into a bowl, add your plant-based milk, and microwave for an easy breakfast in the morning.
