This is the ultimate lazy vegan breakfast. With just three minutes of prep in the evening, breakfast will be waiting for you to grab and go in the morning. The uncooked oats will soak up the milk overnight and essentially “cook” themselves. This breakfast is meant to be enjoyed cold, but feel free to briefly pop it in the microwave if you prefer it warm. We encourage you to add an extra splash of milk or toppings before you dig in.

1 cup old-fashioned rolled oats
1 cup plus 2–3 tablespoons plant-based milk (any variety), divided
½ cup blueberries (fresh or frozen)
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
Optional Add-Ins:
1 tablespoon peanut butter (any type)
Sliced bananas
Ground cinnamon, to taste
1 teaspoon chia seeds
1. In a container, cup, or glass jar, combine the rolled oats, 1 cup of the plant-based milk, the blueberries, maple syrup, vanilla extract, and any optional add-ins. Mix well.
2. Cover and refrigerate overnight or for at least 3 hours.
3. Remove from the refrigerator, top with the remaining 2 to 3 tablespoons of plant-based milk and any optional additions, and enjoy chilled.
