BLT Sandwich

A healthier version of a staple sandwich, this BLT is packed with all the salty-smoky flavor (and protein!) of the original, but without the cholesterol and saturated fat that comes with animal-based bacon. Tell us you don’t want to dive into this savory sandwich right now—is it lunchtime yet?

4 slices sourdough or white bread

2 dollops vegan mayo

1 batch Tofu Bacon (page 234)

1 tomato, sliced

2–4 large leaves romaine lettuce

1 avocado, pitted and sliced

1. Toast the bread and spread the vegan mayo on one side of each slice.

2. Assemble your sandwiches with the tofu bacon, tomato, lettuce, and avocado.
