The next time you’re craving Chinese take-out, skip the delivery and make this fried rice at home instead! We use hand-crumbled tofu, which takes on egglike characteristics, and toasted sesame oil to give it that classic umami flavor. Just watch out—it’s addictive!

1 tablespoon toasted sesame oil
½ medium yellow onion, diced
2 large cloves garlic, minced
½ cup frozen peas
½ cup finely diced carrots
8 ounces (half a 16-ounce block) extra-firm tofu, pressed and broken up into crumbles
2½ cups cooked medium-or long-grain white rice
3 tablespoons soy sauce
Optional Toppings:
Sriracha sauce
Sliced green onions
1. In a large nonstick pan over medium-high heat, heat the sesame oil. Add the onion, garlic, peas, carrots, and crumbled tofu, and sauté until the onion becomes tender and translucent, about 5 minutes.
2. Add the cooked rice and soy sauce. Sauté for 5 to 8 minutes, stirring frequently, until the rice appears golden and gently fried.
3. Top with any optional toppings.
