Buttercream Frosting

Frosting doesn’t get any easier than this. With just three ingredients, you can whip up a batch in minutes. It works great on cakes, cupcakes, and even cookies. We encourage you to get colorful by playing with different frosting add-ins. You can use store-bought vegan food coloring, but one of my favorite discoveries was adding a little bit of defrosted frozen pink dragon fruit purée to this frosting, ½ teaspoon at a time, until I got the beautiful pink hue you see in the photo.

Yield: frosting for 12 cupcakes (about 2 cups)

Prep time: 15 minutes | Total time: 15 minutes

You’ll need: an electric hand mixer

2 cups vegan butter, at room temperature (do not melt)

5½ cups powdered sugar

2 teaspoons vanilla extract

Coloring agent (optional)

1. Using an electric hand mixer, whip the vegan butter in a medium bowl until it’s nice and smooth. Add the powdered sugar ½ cup at a time and mix until the mixture begins to have the consistency of frosting. Add the vanilla extract and whip until the frosting is smooth. If you’d like the frosting to be thicker, add additional powdered sugar a little bit at a time (and refrigerate to chill, which will make the frosting firm up).

2. If you’d like to color this frosting, add the coloring agent and mix well.

Friendly Suggestion: If you don’t have time to let your butter come to room temp, it’s better to use cold butter than to warm it in the microwave. Melted butter will not work for this frosting.
