Prepping for a Halloween party? Want to surprise your coworkers with a sweet treat? Or do you simply need to treat yourself? Whatever the reason or season, these peanut butter cups are waiting for you. With just three ingredients you probably have in your kitchen already, you can bring these homemade nuggets of chocolaty heaven to life. Sharing is optional.
Yield: 12 peanut butter cups
Prep time: 20 minutes | Total time: 1 hour and 20 minutes
½ cup creamy peanut butter
2 tablespoons powdered sugar
1 (12-ounce) bag vegan chocolate chips
1. Line a muffin pan with paper or silicone liners.
2. In a small bowl, combine the peanut butter and powdered sugar and mix well.
3. Place the chocolate chips in a small microwave-safe bowl and melt in the microwave for 45 seconds. Stir and continue to heat in 20-second increments until the chocolate is smooth when stirred. Alternatively, use a double boiler to melt the chocolate (see instructions below). Be careful not to burn the chocolate (which will make it seize and clump up irreversibly).
4. Using a spoon, spread a thin layer of melted chocolate on the bottom of each cupcake liner. Add 1 heaping teaspoon of peanut butter mixture in the center and gently spread it out a little with your finger. Cover the peanut butter with a small amount of additional chocolate, using your finger to swirl it around the top to cover the peanut butter completely.
5. Refrigerate the peanut butter cups for at least 1 hour or until the chocolate has hardened. Remove the peanut butter cups from the cupcake liners and store in the fridge for up to 2 weeks.
