You’ll need: a blender
1 cup pineapple juice
2 cups frozen pineapple
¾ cup coconut cream (full-fat coconut milk from a can will also work—just be sure to shake the can before opening)
1 cup ice
Pineapple slices, for garnish (optional)
1. In a blender, combine the pineapple juice, frozen pineapple, coconut cream, and ice and pulse until smooth.
2. Serve immediately in two tall glasses. Garnish with pineapple slices (if using).
