Pico de Gallo

This simple salsa made with fresh ingredients is a true Mexican classic. It’s the ideal accompaniment to tortilla chips, and it adds authentic flavor to nearly any Mexican dish. Use it to top our Beefy Tacos (page 84), to season our Breakfast Burrito (page 26), and to liven up our Nacho Cheese Sauce (page 137).

Yield: 1½ cups

1 cup diced tomatoes

¼ cup diced red onion

1 medium jalapeño, seeded and diced

2 medium cloves garlic, minced

½ cup chopped fresh cilantro

Juice of ½ lime

In a small bowl, combine all the ingredients and mix well. Enjoy fresh or store in a sealed container in the refrigerator for up to 3 days.
