LEMONGRASS & SHRIMP CLEAR BROTH

Ingredients
• 1 courgette/zucchini weighing 200g/7oz
• 1 tsp olive oil
• 75g/3oz raw, shelled king prawns/jumbo shrimp
• ½ lemongrass stalk, finely chopped
• ½ red chilli, deseeded & finely sliced
• ½ onion, sliced
• 1 tsp freshly grated ginger
• 1 garlic clove, crushed
• 2 tsp soy sauce
• 370ml/1½ cups chicken stock
• 2 tbsp lime juice
• Salt & pepper to taste
Method
1 Top & tail the courgette and use the shredder blade to turn into thin noodles.
2 Gently heat a non-stick saucepan on the hob with the olive oil and sauté the prawns, lemongrass, chilli, onion, ginger & garlic for 2 minutes.
3 Add the soy sauce, stock & courgette noodles and simmer for 3-5 minutes or until the noodles are tender and the prawns are cooked through.
4 Stir through the lime juice, season and serve.
CHEFS NOTE
Half a teaspoon of ground ginger is fine to use if you don’t have fresh root ginger.
