Ingredients
• 1 sweet potato weighing 125g/4oz
• 1 courgette/zucchini weighing 200g/7oz
• ½ onion, sliced
• 1 garlic clove, crushed
• 1 tsp medium curry powder
• 1 tbsp water
• Low cal cooking oil spray
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the chipper blade to turn into thick spirals.
2 Top & tail the courgette and use the shredder blade to turn into thin noodles.
3 Cook the potato spirals in salted boiling water for 2-3 minutes. Drain and put to one side.
4 Gently heat a large non-stick frying pan on the hob with a little low cal spray, add the onions & garlic and cook for a few minutes until softened.
5 Mix together the curry powder and water and add this to the pan along with the sweet potato spirals and courgettes noodles.
6 Increase the heat a little, combine well and cook for about 5-7 minutes or until everything is golden brown and piping hot (add a splash of water to the pan if you need to loosen it up).
7 Check the seasoning and serve.
CHEFS NOTE
Try breaking an egg into the pan and binding everything together into a hash.
