GARLIC & BROCCOLI ‘PASTA’

Ingredients

  Courgettes/Zucchini weighing 300g/11oz

  2 tsp olive oil

  2 garlic cloves, crushed

  150g/5oz purple sprouting broccoli/Broccolini, finely chopped

  ½ onion, chopped

  1 tsp anchovy paste

  Salt & pepper to taste


 

Method

1 Top & tail the courgettes and use the shredder blade to turn into spaghetti noodles.

2 Gently heat a large non-stick frying pan on the hob with the olive oil. Sauté the garlic, chopped broccoli, onions and anchovy paste for a few minutes until softened (add a splash of water to the pan if it needs loosening up).

3 Add the spaghetti noodles and move around the pan for 3-5 minutes or until everything is piping hot.

4 Season and serve.

 

CHEFS NOTE

Any type of young tenderstem broccoli works well for this recipe, sauté for longer if you prefer the broccoli soft.
