SWEET POTATO & SUNDRIED TOMATO SAUCE

Ingredients
• 1 large sweet potato weighing 200g/7oz
• 2 tbsp pitted black olives, sliced
• 2 tsp olive oil
• ½ onion, sliced
• ½ tsp dried oregano
• 1 tbsp sundried tomato puree/paste
• A pinch of crushed chilli flakes
• Salt & pepper to taste
Method
1 Peel the sweet potato and use the shredder blade to turn into spiralized sweet potato spaghetti.
2 Cook the spirals in salted boiling water for 1-1 ½ minutes. Drain and put to one side.
3 Gently heat a large non-stick frying pan on the hob with the olive oil and sauté the onions and oregano for a few minutes until softened. Stir through the sundried tomato puree and add the sweet potato spaghetti and chilli flakes.
4 Move about the pan for a couple of minutes until everything is piping hot (add a splash of water to the pan if you need to loosen it up).
5 Season and serve.
CHEFS NOTE
You could also try including a teaspoon of chopped capers when you sauté the onions.
