SESAME & SUGAR SNAP SOUP

Ingredients

  1 courgette/zucchini weighing 200g/7oz

  1 tsp sesame oil

  ½ onion, sliced

  1 garlic clove, crushed

  ½ tsp freshly grated ginger

  75g/3oz sugar snap peas

  ½ pak choi/bok choi, shredded

  A pinch of crushed chilli flakes

  2 tsp soy sauce

  370ml/1½ cups chicken stock

  Salt & pepper to taste


 

Method

1 Top & tail the courgette and use the shredder blade to turn into thin noodles.

2 Gently heat a non-stick saucepan on the hob with the olive oil and sauté the onion, ginger & garlic for 2 minutes.

3 Add the peas, pak choi, chilli flakes, soy sauce, stock & courgette noodles and simmer for 3-5 minutes or until the noodles are tender.

4 Season and serve.

 

CHEFS NOTE

If you don’t have pak choi use shredded pointed cabbage.
